Level 5 adds a skim coat across the entire surface, which is what you want under gloss or semi-gloss, on a long wall, or anywhere a window throws light across the surface at a low angle. We agree which one before we start.
Manageable, if it is planned for. We seal off the work area, cover the route from the door, and sand with dust-controlled equipment rather than a pole sander and an open window. It is not zero, but you should not be finding dust in rooms we never worked in.
Usually. Older stipple and knockdown ceilings can be blended, though an exact match on an aged surface is difficult and sometimes the honest answer is to redo the full ceiling rather than chase a patch that will always be visible. We will show you a test area before committing either way.
